This is the most comforting and scrumptious winter-warmer of all. Golden brown chicken, creamy wine sauce, this is an easy French dish that will see you come back for more. Serve it with plain rice, mashed potatoes, or crusty white bread to soak up that beautiful sauce.

Ingredients

100g onion, diced

300g leek, sliced

25g parsley, chopped

1 tbsp oil

4 tbsp flour

⅓ cup white wine

1 bay leaf

1 tbsp dijon mustard

Rice to serve

6 chicken thighs, skin on

20g butter

1 cup chicken stock (homemade or store-bought)

1 cup thickened cream

Directions
Pre-heat the oven to 165°C/325°F. Season chicken thighs with a good sprinkle of salt and pepper.
Melt butter and oil in a large oven-proof dish over medium heat. Place chicken skin-side down, and sear both sides until golden brown and set aside.
Cook the onion, leek, stirring occasionally, until soft and browned. Season with salt and pepper.
Pour in the flour, whisk it well and cook for 1 min. Stir in wine, scraping any browned bits from the bottom of the pot. Add in stock, parsley, mustard, bay leaf and return chicken to the pot.
Cover and cook in the oven for 40-45 mins, or until the chicken is tender. In the meantime, prepare the rice as per pack instructions.
Stir in the cream, season with salt, pepper and serve immediately with rice.
