Crisp Cheat Potato Omelette
As a French student in the 90's, this was our go-to easy, tasty, cheap, and filling lunch! After over 20 years, it randomly came back to me, and I had to try it again. It didn't taste quite as amazing as I remembered, but still pretty tasty and it was literally ready in 5 minutes - as quick as a pot noodle!
120g of crisps/potato chips
1 tbsp oil
Salt & pepper to taste
Preheat the oven grill. Beat the eggs and soak the crisps in the eggs for a minute or so to soften.
Heat the oil in an ovenproof non-stick frying pan until it melts, then add the egg/crisp mixture.
As it firms up around the edges, place under the grill for 1 min or so.
