Gipsy schnitzel (or Zigeuner schnitzel) is German classic typically enjoyed on a night out with live music and a hefty dose of pub vibes.However, it can also easily bere-createdat home and served with crispy french fries and wedge of lemon for an authentic taste!

Ingredients

100g onion, diced

200g capsicum, sliced

30g parsley, chopped

2 tbsp garlic paste

1 cup chicken stock (homemade or store-bought)

1/2 cup pouring cream

4 chicken or pork schnitzels

100g grated cheese

2 tbsp olive oil
-
2 tsp paprika
-
1 can chopped tomatoes

2 tbsp tomato paste

Salt & pepper to taste

Directions
Heat oil in a large pan on medium heat. Add the onion, capsicum, garlic and sauté for a few minutes until softened.
Add paprika, parsley, tomato paste, canned tomato, stock and stir until well blended.
Lower the heat and simmer, stirring occasionally, for about 20 minutes. In the meantime, cook the schnitzels as per pack instructions.
Pre-heat the grill, season the sauce to taste. Place the schnitzels on top of the sauce, sprinkle with cheese and grill until the cheese is fully melted.
