Bread & Butter Pudding
Zero Waste Baking
Bread & butter pudding is a British classic, and the ultimate way to use up leftover bread. I still remember the first time I tried it as a kid. It’s warm custardy center sends me straight back to that moment each and every time I eat it. Sultanas or chocolate chips can also be added between bread layers for a change.
1/4 cup caster sugar
½ tsp cinnamon
1 tsp vanilla
2 cups milk
1 cup cream
40g butter, melted
Bread, preferably stale (8 slices or so)
Preheat oven to 180°C. Whisk eggs, sugar, vanilla, cinnamon, cream, and melted butter in a jug.
Cut bread into cubes if using a loaf, or diagonally in half if using sliced bread, and soak in egg mixture before arranging in the dish.
Sprinkle with sugar and bake for 30 minutes or until crispy and golden.
Serve warm with a dollop of ice-cream or cold custard.
