Mozzarella-stuffed Parmesan Dumplings
Yes, double the cheese and double the gooeyness!! Mozzarella Stuffed Parmesan Dumplings were introduced to me by a friend, and I couldn't believe how tasty these are. Perfect alternative to pasta when you have a big batch of Bolognese or stew at hand!
80g cold unsalted butter, cubed
150g self-raising flour
80g parmesan, grated
Few splashes of milk until dough comes together
8 small chunks of mozzarella
Simply make your dough by first combine all the dry ingredients, apply a little milk until the dough comes together.
Rollout out until about a half an inch thick, then divide into 8 pieces. Flatten in your hand, add a chunk of mozzarella, wrap around with dough, repeat!
Then rest on top of the sauce or stew and watch the magic happen uncovered in the oven for about 25 minutes.
