Make the most of the festive season to bake these super quick and easy Christmas Cookies for your loved ones. These cookies will hold their shape perfectly when baked so great for shaping and decorating. If royal icing isn't for you, simply use store bought coloured writing gel instead!

Ingredients

1 cup softened butter

1 cup caster sugar

2 tsp vanilla extract

1 egg

3 cups plain flour

3/4 tsp baking powder

1 pinch salt
Directions
Preheat Oven to 180°C / 350°F (160°C fan). Line 2 baking sheets with parchment paper.
Beat butter and sugar in a large bowl until creamy and white. Add egg and vanilla, beat until completely combined. Add flour, baking powder, and salt and mix well.
Dust work surface with flour, scrape dough out of bowl. Pat together then cut in half, then shape into 2 discs. Roll out, sprinkling with flour under and over the dough so it doesn't stick.
Use shapes to cut out cookies and transfer to lined trays. Bake for 10 minutes, rotating trays halfway, until the edges are just beginning to turn light golden.
Cool completely before taking out of trays to decorate!
