Quick Vegetable Pickle

It’s hard to beat the sharp tang and crisp snap of a good homemade pickle. Beyond the classic cucumber, there are many more options such as onions, cauliflower, radish, carrots, garlic and more. They’re great to have at hand to add freshness and crunch to your fish taco, or fast track your next Vietnamese salad.
1 cup white vinegar
1 cup of water
1 tbsp sugar
1 tsp salt
Vegetables of choice
Mix 1 cup white vinegar, with 1 cup of water, 1 tbsp sugar and 1 tsp salt in a small pan. Bring to the boil to dissolve and leave to cool.
Clean your glass jars, prepare your vegetables and pack into the jars. Add dill, mustard seeds and cover with vinegar brine.
Enjoy after 24h and store in the fridge!
