Quick San Choy Bow
Effortless Weeknight Favourites
San choy Bow (or Chinese lettuce cups) is a fun and delicious DIY family friendly dinner. It's also cheap, healthy, and super quick to make. It literally comes together in under 15 minutes!
2 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp sesame oil
1 tbsp coconut oil
1 cup (60g) vermicelli rice noodles
2 tbsp peanuts crushed
500g pork mince
10 iceberg lettuce leaves, washed, dried, trimmed
1 cup carrot, chopped
1 cup onion, chopped
2 tbsp garlic, crushed
2 tbsp shallot, chopped
2 tbsp coriander, chopped
Mix sesame oil, soy and oyster sauce in a bowl and set aside.
Heat coconut oil in in a wok and pan-fry the pork for 5 minutes, breaking up big chunks until fully cooked through and brown. In the meantime, prepare the noodle as per pack instruction.
Add carrot, onion, garlic and cook for another 5 minutes. Stir in the sauce and the noodles.
Serve warm in the lettuce cups, with a sprinkle of shallot and coriander and crushed peanut.
