Quick San Choy Bow

San choy bow (or Chinese lettuce cups) is a fun and delicious DIY, family-friendly dinner. It's also cheap, healthy, and super quick to make.
Mix sesame oil, soy, and oyster sauce in a bowl and set aside.
Heat coconut oil in a wok and pan-fry the pork mince for 8-10 mins, breaking up big chunks until cooked through and brown.
In the meantime, prepare the noodles as per pack instruction.
Add carrot, onion, garlic and cook for another 5 mins. Stir in the sauce and the noodles.
Serve warm in the lettuce cups, with a sprinkle of coriander and crushed peanut, chilli sauce.
