Quick Zucchini Slice
The humble zucchini slice is a super easy, healthy, and versatile dish. It's great served hot for brunch or with a side salad for dinner - or cold in the kids' lunchbox.
Preheat oven to 180°C/ 360°F.
In bowl, mix together eggs and flour, then add zucchini, onion, coriander and cheese. Season to taste with salt and pepper.
Bake for about 30 mins, or until set and browned. Serve with an extra sprinkle of coriander on top.
