Roasted Artichoke with Garlic Butter
Eat your heart out…Roasted garlic butter artichokes are just the bomb! So easy and the flavour of the artichokes really shine through - perfect meat-free meal for International Vegetarian Day!
4 fresh artichokes
3 tbsp parsley, chopped
1 tbsp garlic, minced
100g melted butter
Salt and freshly ground black pepper
Remove the stem of the artichoke. Cut about 2 cm off the top of the artichoke. Take half a lemon and rub lemon juice over the cut portion of the artichoke to prevent it from browning.
Make a garlic/parsley butter mixture to drizzle and spread over the top of the artichokes.
Sprinkle with fresh Parmesan and cover with aluminum foil. Bake at 220°C for 1-1.5h.
