British Sausage & Bean Stew
This british classic is comforting, hearty and packed full of flavour! This no-fuss, one pot dish is perfect to lift your spirits during the cooler winter months.
100g onion, diced
100g celery, diced
200g capsicum, sliced
30g parsley, chopped
2 smoked chorizos, diced
6 pork sausages
2 tbsp garlic paste
1 cup chicken stock, store-bought or homemade
1 tbsp oil
1.5 tsp smoked paprika
1/2 tsp ground cumin
1 can chopped tomatoes
1 can white cannellini beans
1 can red kidney beans
salt & pepper to taste
Heat 1 tbsp olive oil in a large ovenproof dish or pressure cooker pot over medium heat. Add the chorizo and cook until browned, about 5 minutes. In the meantime, preheat the grill to cook the pork sausages.
Add onion, garlic, celery and cook, stirring occasionally. Add capsicum, paprika, cumin, season with salt/ pepper and cook for another 5 minutes.
Stir in chopped tomatoes, parsley, stock, beans and grilled sausages. Stir well and cook for 45 minutes if using a pressure cooker 2 hours if using an oven proof dish.
Serve with a sprinkle of fresh parsley and a piece of fresh crusty bread.
If using an oven-proof dish, once cooked, you can finish it off uncovered with a sprinkle of bread crumbs on top.
