Spiced Chorizo Shakshuka
Under 30-minute Meals
Shakshuka is a classic North African and Middle Eastern dish that can be eaten for brunch, or any meal of the day. It's a super easy one-pan meal, but its warming spices make it super satisfying too! It's also delicious without the chorizo if you prefer a meat-free version.
Heat olive oil in a large pan and cook chorizo for 2 mins. Add onion, capsicum and cook for 5 mins, or until softened.
Add garlic, paprika, cumin, mix well and cook for another 5
mins, until fragrant and starting to brown.
Add tomatoes, parsley and mix well. Season with salt, pepper and bring the sauce to a simmer.
Use a spoon to make small wells in the sauce and crack the eggs into each one. Cover the pan and cook for 5 mins, or until the eggs are set and done to your liking.
Garnish with chopped coriander, crumbed feta and serve with lightly toasted flatbread or baguette.
