Spicy Pepperoni Pizza
Effortless Weeknight Favourites
A pepperoni pizza made with store-bought pizza sauce and base has to be one of the quickest and easiest weeknight dinners of all. You can customise toppings to your liking to include extra mushrooms, olives or fresh mozzarella. The below recipe makes 2 large pizzas, to be shared and can be served with a side salad.
1/2 cup onion, diced
1 cup capsicum, sliced
2 tbsp coriander, chopped
150g grated cheese
2x pizza dough balls or bases (store-bought, at room temperature)
100g pepperoni salami, sliced
100g pizza sauce
1 tbsp chili flakes (optional)
Preheat oven to 260°C/ 500°F. If you are using a pizza stone, preheat it in the oven as well.
Roll out dough on a lightly floured surface.
Add a light layer of sauce all over the pizza, leaving about 1 cm crust around the edges and top with grated cheese. Sprinkle the onion and capsicum generously on top (it will reduce when cooking), place the pepperoni evenly and top with a bit more cheese. Season with black pepper and a sprinkle of chilli flakes.
Cook for 5 minutes, then rotate the pizza halfway so it cooks evenly. Cook for another 5 minutes, or until the crust is golden brown and the cheese fully melted. Top with fresh herbs and slice to serve.
For a lighter version, bread wraps can also be used as a pizza base!
