This Sweet and Sour Pork is the perfect weekend "fakeaway" treat! These extra-crispy pork neck chunks are tenderised for a soft and juicy center and coated in a deliciously sweet and sticky sauce. Perfect served with plain or stir-fried noodles or rice!

Ingredients

600g pork butt, diced in big chunks

1 onion, grated

1 tsp garlic, crushed

1 tsp ginger, crushed

1 tsp baking bi-carb soda

2tsp cornflour + 1/2 cup before frying + 4 tbsp to thicken the sauce

2 tbsp soy sauce

1/2 cup white sugar
-
1/2 cup apple cider vinegar
-
3 tbsp ketchup
-
1/2 tsp Worcestershire sauce

1 tsp bbq sauce
-
1 cup canned pinapple, diced + juice
-
1/2 cup water
-
2 - 3 cups vegetable oil

1 garlic clove
-
1 onion, finely sliced

1 red capscicum, sliced
Directions
Mix pork with grated onion, ginger, garlic, soy, bi-carb and 2 tsp cornflour. Marinade 18 to 24 hours
To make the sauce, mix sugar, vinegar, ketchup, Worcestershire sauce, BBQ sauce, pinapple juice, cornflour and mix well. Add water, mix again and set aside.
Mix 1/2 cup cornflour into the pork and leave for 5 minutes. If it looks wet and sticky, add a bit more before frying. Heat oil in a large sauce pan and fry the pork in batches. 7-10 minutes or until golden brown and fully cooked through. Set aside.
In a frying pan, heat a splash of oil. Add garlic and onion, stir for 1-2 minutes. Add capsicum and stir for 4-5 mins or until softened. Add the sauce & pineapple, and simmer for 2 minutes until it thickens.
Add pork, quickly toss to coat and serve immediately!
